Key Lime Cheesecake

I made this yesterday for a party and it was a hit. The only thing I did differently is put about 1 inch of boiling water into an oven tray and then put a round cookie tray cooling rack in the water. I then put the cheesecake on the tray so it wasn’t actually sitting in the water but just above the water. This way it still got the moisture without having to risk the crust getting wet. To be extra sure, I still put aluminum foil around the bottom. It came out beautifully.

S’mores Bites

I have made these from a different recipe and lost it. I am so glad I found this recipe. I put a little less sugar in them, but these are perfect for a get together or a child school bake sale!
Here’s a tip, if you can’t stand till long enough to press each cup, use a 2nd mini muffin pan to press them together all at once. It works great and takes 2 seconds
